BAJOQUES FARCIDES (stuffed peppers)
Ingredients
4 large red peppers
200g of ground beef
400g of rice
1 ripe tomato
8 spoons of olive oil
4 or 5 garlic cloves
Salt and paprika
Preparation
- Clean the red peppers and cut them from the top, making a circular cut and removing a “lid” which is put to one side.
- Place the oil in a pan and when it is hot add the garlic and the ground beef.
- When half done add the tomato and fry it. Add the rice.
- Add the paprika and salt. Remove it.
- Stuff the peppers with the other ingredients.
- Pre-heat the oven at 200ºC.
- Cover the peppers with aluminium foil, put in the oven at 175ºC and cook for 90 minutes approximately.
